Static racking of the must. Electronic thermo-regulated fermentation (16-20°) in stainless steel tanks for a period of 3 weeks. Maturing on fine lees.
Tasting Notes
Gooseberry, lemon zest, green peach and guava on the nose. It’s medium-bodied with bright, tangy acidity. Fresh, fruity and crisp. Drink now. – James Molesworth
