Vinification
Virtually total de-stemming, pumping over twice a day. Vatting time : 2 to 3 weeks in concrete vats. Matured for 18 months in vats and “foudres” (15%).
Tasting Notes
Steeped black cherry and singed anise notes are fluid and smooth in this streamlined red, layered with lavender, roasted apple wood smoke and charred herbs. Ripe, with good freshness, this ripples with chalky minerality, adding textural intrigue.
