Virtually total de-stemming, pumping over twice a day. Vatting time : 2 to 3 weeks in concrete vats. Matured for 18 monthsin vats and “foudres” (15%).
This wine is a single vat selected in the cellars from the thirty vats produced each year.
Tasting Notes
The nose is spice driven, with fennel seed and potpourri layered over pressed cherry and plum, edged by cinnamon stick. The palate follows with kirsch, white pepper, violet, and black plum through the finish. Approachable now, but built to cellar confidently through 2038
