Vinification
100% hand harvested. Harvested very early in the morning as to benefit from freshness. Protection of bay and juice from the aeration as to avoid any oxidation. Pneumatic pressure, cold settling and slow fermentation (18°C) in a stainless steel vat. Grapes must have more than 525 g/L of sugar. 95° grain alcohol is used to halt fermentation at the perfect moment.
Tasting Notes
Lightly spicy and moderately sweet, featuring creamed peach, melon and pear flavors, with a hint of acacia gliding through the finish. – JM
