Vinification
Slow, natural fermentation, aged on the lees. 70% in stainless steel tanks and 30% in French oak barrels. This blending of oak and steel creates an elegant wine of great finesse.
Tasting Notes
As its name suggests, this wine comes from vines planted around the chateau that has 13th-century origins. Structure and strong minerality balance bright apple and citrus flavors. With spice and a tangy character, the wine will certainly develop. Drink from 2021. —R.V.
