Vinification
Grapes are pressed at low pressure and cold stabilized, in contact with their lees for 8 days. Fermentation is done at low tempterature, in contact with lees, for 10 Months. Fermenting juices are stirred weekly.
Tasting Notes
One of a series of limited-production, single-vineyard wines, this is densely textured and strongly mineral. It is rich with perfumed green fruits, herbal hints and tight, textured acidity. All these elements need to age further, so drink from 2021. – RV
